Don’t You Just Love a Good Bread?

There is something so sensual about homemade bread. French, sourdough, focaccia, challah. You know the drill. Some of my favorite bread to make is quick bread or french bread because let’s be honest, I DO NOT have the patience some days to let the damn yeast rise. It is a beautiful thing once it’s done though. The photos above are some of the french bread that I’ve made and the right one is obviously bruschetta. A definite favorite of mine. So simple and pure, yet so refined. I like to add a little cheese sometimes for some extra bite and flair. Typically a hard cheese or fresh grated parmesan. The saltiness is just perfection! The egg wash is the MOST IMPORTANT part besides letting the yeast work its magic. It’s a delicate procedure that really does need to rest. I always put mine above the oven if its a quicker bread because the heat really helps activate the yeast.

Have no fear, I didn’t create this post to just blab your head off. I wanted to share some of my favorite bread recipes and links. I hope that this finds someone and is able to help them whip up some incredible breads in the kitchen and if you do, send me your results or spins you put on your breads.

These are all mostly beginner breads and easy, fun recipes to use while you’re busy taking care of the kids or watching a good flick or two. Maybe even 3. No judgement here!

KOMBUCHA

Like Kombucha? Have sensitivities? Try this!

This link was a lucky find that I found while trying to learn how to make Kombucha! This lovely post by Sarah gives you all the tips and tricks to make a delicious Kombucha and help you save money! I suffer from Candida and as a female have suffered from sensitivities and had certain issues within the last couple of years. I just want you to know that if you feel like you’re alone, you aren’t. I have so many sensitivities that some days, it is FRUSTRATING. I hate having so many problems. Some days its gluten, others hot(spicy) foods bother me. If I drink too much, it can cause issues. If I don’t eat enough fruit. The list goes on and on.

On that note, I have found that kombucha really helps save my gut and bloating issues. It is full of GOOD BACTERIA and while it isn’t the tastiest thing in the whole world, it sure is good for you. I also take #Gardenoflife 50 billion Once Daily women’s and #Dr.Tobias Candida support. I just began taking the candida support so stay tuned as I will keep you updated on if it helps. If you suffer from Candida or sensitivities, Apricot and Avocado are two of the best foods you can eat to help counter-act it. All I can say is supplements, supplements, supplements.

With supplements, make sure you do your due diligence and research them! Make sure that they are organic, vegan gluten free and made from natural ingredients. A lot of vitamin companies are cheap and make their supplements in a way that isn’t necessarily good for your body. I always read reviews and try to find reviews that people follow up on and look up the company. I hope that you enjoy this kombucha and it helps your tummy feel MUCH MOOOO BETTA. If you just like the taste and don’t have sensitivities, I hope that you just find some sort of use for it as well.

The Most Amazing Peanut Butter Blossoms

I love a good peanut butter cookie. There is something so magical about these cookies.. I think that they take me back to my childhood and always only wanting the center part because of the Hershy Kiss. Here is my recipe for you to enjoy! It makes 42 cookies!

Ingredients:

  • 1/2 Cup of Butter (or EVOO or coconut oil)
  • 1/2 Cup peanut butter
  • 1/2 Cup packed brown sugar
  • 1/2 Cup white sugar
  • 1 egg
  • 2 Tbsp milk or almond milk to make it slightly healthier
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1- 3/4 Cup AP flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 Cup white sugar for decoration after cookies are finished baking
  • 9 oz bag of Hershy’s kisses (unwrapped obviously)

Directions:

  • Preheat your hot box (oven) to 375 F and grease them cookie trays!
  • In your kitchen aid or mixing bowl with an electric mixer, cream together that buttaahhh and white sugar! This takes about 5-10 minutes for a perfect consistency. The longer, the better for the creaming method!
  • Beat in the egg
  • Stir in vanilla, almond and milk
  • Combine the flour, baking soda and salt, sift then incorporate into the wet ingredients
  • Stir in that peanut butter goodness!
  • For the perfect rounded cookie, use a small ice cream scoop for a more moist, thick cookie, otherwise roll them into about Tablespoon sized balls. I use a spoon to measure the cookies so that they are all consistent.
  • Make sure to roll the cookies into the sugar before placing them on the cookie tray
  • Place 2 inches apart so that they don’t combine together
  • Bake them thangs for 8-10 minutes. Remove and place those chocolatey kisses in the center. Allow to bake for 2 more minutes then remove and let cool.
  • Take photos, send them my way and I hope that you enjoy them as much as I do.

I’m currently working on a healthy version of these that will be more macro friendly and easier on that waist line but I think these are one of those types of cookies that you just embrace the unhealthiness and that is perfectly fine. It’s ok to cheat every now and then. Balance, I repeat, balance. Now, get to baking and send me your results!

Shaking It Up Gin Style

Stuck still in this damn quarantine? Well have I got a treat for you. This little cocktail will sizzle things right up for your Covid day. If you were looking for the perfect gin cocktail, LOOK NO FURTHER. Plus, it has veggies in it so it’s healthy right???

Ingredients:

  • Hendricks Gin (2 oz), or more if you wanna get it poppin’
  • .5 oz of Elderflower liquor
  • 3 slices of jalapeño
  • 2 basil leaves
  • 2 cucumber slices
  • 1 swirl of Agave in the shaker or cup depending on how you plan on shaking this thing up
  • .5 FRESH lime juice
  • AHA ginger peach seltzer water or watermelon mint. I use about 1/2 a can per drink

Directions:

  • Muddle the basil, jalapeño, lime juice and cucumber with the agave and elderflower
  • add gin
  • Fill shaker with fresh ice
  • Shake, shake, shake
  • Poor flavored seltzer in your cup (whatever cup you want honey)
  • Strain cocktail into seltzer cup
  • Enjoy!

Buffalo Chicken Made Macro Friendly

Buffalo Chicken Dip Made Maro Friendly

Everyone loves a good buffalo chicken dip. The problem is is that it’s super high in fat and sodium. Well, I’ve switched that up for you and made a version of it that’ll keep your tummy flatter and your love handles a little less there.

The recipe is super easy and inexpensive.

For this round I did..

  • 3 chicken breast cooked at 350 for 30-60 minutes depending on the size of them thangs. I seasoned them with sesame seeds (1 tbsp), fresh garlic minced (t tbsp), sea salt (to taste), pepper (to taste), dehydrated onions minced (about 1/4 cup), onion powder (1 tsp), garlic powder (1 tsp), olive oil (about 1/4 cup) and chicken stock (however much of it that you want man). Obviously flavor your chicken however you want.
  • 4 stalks of celery cut to size of your choice
  • 1 container of tomatoes from Publix or about 1 cup of tomatoes. The more the merrier!
  • Hidden Valley ranch seasoning, about half the packet
  • about 1.5- 2 cups of buffalo sauce depending on how hot you want it. I did about 1.5. I used Sweet Baby Ray’s buffalo wing sauce and I actually loved it more than Franks
  • 1 cup of Chobani Greek non-fat yogurt

The best part of all of this is you cut out the crazy amount of fat and reduced the sodium content by like 2/3.

Directions:

  • After chicken cools down, start forking to separate or if you have a Kitchen aid, crank that sucker up and let it shred that chicken for you
  • I like to add the tomatoes and celery next
  • Add the greek yogurt and ranch seasoning
  • Add buffalo sauce and add whatever else that’s left or extra that you want to add
  • Enjoy!

I love to eat this stuff with celery, sandwich style, by itself or with some crackers. It’s super easy, super yummy and is packed with flavor.

Are You a Morning Thriver or Night Rider?

During Covid-19 my mornings have been constantly changing. Some mornings I am up at 8 am and others 11:30. There’s no rhyme or reason. It just is what it is… I have found the best thing for me to do in the mornings is wake up, get that gooooooddd stretch in and have a 10 minute meditation sash followed by a kick ass workout. It just gets my mind right and gets things flowing. In a time where I have nothing but time, there’s no excuse but to get out and do a little internal healing. With that being said, are you a morning thriver or night rider?

I feel like sometimes I can be a little bit of both. I have some of my best thoughts at night and in the morning I feel the best so I try to do the most I can that will help get my day off on the right path. Did you know that what you eat in the morning can largely impact the rest of your day? I was reading an article the other day and did some digging. I discovered that the foods you eat can make or break your mood for the day. For example, foods like processed sugars and heavy fats are no bueno! Eat some fruit and plant based items. Large amounts of proteins aren’t recommended either. I was surprised that this was something I had never thought of or even considered before.

Anyhow, the whole point of this post is to say hello and get the thoughts flowing. Right now I’m in the phase where I’m trying to decide what kind of content I want to really hone in on most or if I just wanna dilly dally in a little bit of everything. THERE’S SO MANY OPTIONS!!! What would y’all like to see? Is there certain content that is more interesting to you? I am hoping to get some recipes up and running soon for people to dive in on and then we will see how it goes from there. I have missed blogging so much and if this kicks off, FANNNNN FREEKIN TASTIC. If it doesn’t, oh well. The world shall continue on.
